15 Bean Soup (Instant Pot)

INGREDIENTS

15 bean soup packet 1 bag
Olive Oil 2 Tbsp
Yellow Onion, diced 1-1/2 cups
Garlic, Minced 3 cloves
Chicken Broth 8 cups
Chili powder 2 tsp
Cumin, ground 1 tsp
Oregano, dry 1 tsp
Black Pepper 1/2 tsp
Cayenne Pepper 1/4 tsp
Ham Hock 1 hock
Bay Leaves 4 leaves

RECIPE INSTRUCTIONS

Things To Try

• half broth, half water
• tomato sauce instead of one of the cups of liquid
• add celery and carrots (2 ribs and 1.5 cups)

Directions

1. Soak beans overnight
2. Sauté onions in olive oil in Instant Pot
3. Add garlic and briefly sauté, and turn off Instant Pot
4. Add beans, mix
5. Add broth and seasonings and ham hock and bay leaves
6. Seal and pressure cook for 40 minutes
7. Natural release for 15 minutes, then release
8. Tear out meat from ham hock and add back in
9. Remove bay leaves
10. Mix in smoke flavor packet
