Fruited Rice Casserole, vegan

INGREDIENTS

Onion, Chopped 2 cups
Celery, chopped 2 cups
Butter, vegan 4 tbsp
Pecans, chopped 1 cup
Raisins, golden 1 cup
Rice, long grain 2 cups
Vegetable Broth, 3 3/4 cups
Oregano, dry 2 tsp

RECIPE INSTRUCTIONS

Things To Try

* After bringing to a boil, can put in casserole pan and bake at 350 degrees for 20-30 minutes until liquid has evaporated
* Use more onions and pecans!

Directions

* Sauté onion and celery in butter until tender and glossy
* Add pecans and raisins and sauté for a few minutes
* Add rice grains and sauté briefly, tossing so grains are well coated in butter
* Add vegetable broth and oregano (rub with hands to activate the oils when adding)
* Bring to boil
* Stir the rice to make sure grains are not sticking to the bottom
* Cover pot, reduce heat to low, simmer for 20 minutes

Notes

We used the dutch oven, which worked great!
