Red Lentil Flatbread

INGREDIENTS

Red Lentils 1 cup
water 1.5 cups
Salt 1/2 tsp
Garlic Powder 1 tsp
Cumin 1/2 tsp
oregano 1/2 tsp
Avocado Oil 1 tbsp

Things To Try

* Can try a can of chickpeas, too, but that requires adding chickpea flour as well as chilling the patties before frying.

Directions

1. Soak the red lentils in 1-1/2 cups of water for about 3 hours. This step helps soften the lentils, making them easier to blend.

2. Once soaked, drain and blend (in our case, we did it in a food processor) until you have a smooth consistency.

3. In a bowl, mix the salt, garlic powder, cumin, and oregano. Add to the blend and mix thoroughly.

4. Heat oil in a large pan over medium heat, and then pour lentil batter in batches to form flatbreads (similar to pancakes).

5. Cookeach flatbread for about 3-4 minutes on eash side, until they turn a golden brown.
